I have long been a proponent of probiotics and, in turn, fermented food. This began while I was having digestive issues some years ago, and found that probiotic drinks did indeed help soothe my problematic stomach. And while those gastrointestinal troubles eventually ended up requiring medical intervention, it did leave the impression that fermented goods / probiotics = beneficial to an extent.
Fast forward to 2024, and I began hearing about this trendy new restaurant that specializes in, you guessed it, ferments and pickled stuff! M even brought his family to try and reported that they enjoyed the experience. That's how it came about that we eventually celebrated our anniversary there with a hearty brunch, which you can watch here:
While I'm no expert at all the new and innovative dining places around the metro, I do feel like I haven't quite seen anything like this in a long time. The concept is bold, experimental, and niche AF! And what's exciting is how creative NowNow gets when it comes to inserting fermented components into each dish.
