Good morning! (It might not still be morning when you receive this, the day is getting away with me). It's that time of year when recipes start to really get interesting. I keep waiting for the hot hot weather to return because, I've become super accustomed to it by this point but suddenly, it's temperate outside and sometimes a bit chilly! So, here are some great recipes for welcoming in FALL! This Pumpkin Cranberry Bread is delicious and Sarah created this recipe JUST for our readers. I hope you'll love it! This Lasagna Soup is a winner too! Your family will gobble it up. Easy too! Try these yummy Pumpkin Cheesecake Cookies the next time you want to share with friends! They will love them! __________________________ HOT COOKING TIP OF THE WEEK If you ask me, what really makes a meal special is a sauce. You know, a special super flavorful drizzle to accompany the main dish. It doesn't matter if it is a gravy, a thin stock, a bit of pan sauce, a thick tomato salsa, etc. Just something that adds more flavor to the dish. I always think that a sauce makes a meal more professional and it shows that the cook is super thoughtful of the guest. So, if you provide your family or friends with a perfectly cooked chicken breast over a bed of rice, that is beautiful. Add a drizzle of a pan gravy made with the drippings, a bit of chicken stock, some cream and some herbs. Oh my goodness, you just took it to a whole different level. You can almost always make a pan sauce like I just said. If you aren't confident enough to do that, you can also make some really tasty sauces using the packet section at the grocery. One of my favorites is the "Au Jus" packet, it couldn't be easier. Just add water. There are a lot of choices, just go look and add this to your repertoire. In the mean time, work on learning to make a pan sauce, you won't be sorry to have this in your arsenal of things that you know how to do in the kitchen! __________________________ THREE LITTLE THINGS I am trying to be more thankful for the small things in life as that reminds me to be more gracious and thoughtful about the larger things too. - Time with old friends - I'm thankful for a childhood friend who is visiting me this week. We were friends as small children and then took different paths in school and grew apart. Facebook helped us connect again and we have so many of the same interests. It's been fun chatting and getting to know each other again.
- Dry Shampoo - I have that kind of hair that needs to be washed every day. Dry shampoo has changed my life and made my hair look better too! Hallelujah!
- Cooler Days - Thank God it has cooled off some. Hot flashes and million degree days don't go together.
___________________________ A FINAL WORD I shared this on facebook this morning, but I can't quit thinking about it, so I'll share it here too. When we went out kayaking on Lake Brandt yesterday, we saw an eagle. When he landed in a tree near the shore, you've never seen me paddle so fast or so long without stopping. He swooped across the water and landed on an old dead snag of a tree from which he could survey his entire kingdom. He made no noise at all. There were no calls, no great flapping of his wings, nothing at all stood out about his presence except the fact that his majestic self was there. The other nearby birds began making danger calls and loud announcements on his behalf. I saw many smaller birds carefully flutter away tree by tree. An eagle doesn't have to tell anyone that he is an eagle. There's no boasting or bragging or swag. Just an inner peace and being that says it all.
