My husband and son both love Chinese food. I have posted many Hakka Style Chinese dishes. I always try to cook something different so decided to make vegetable stir fry with Manchurian balls. I had all the ingredients in my fridge. Manchurian are usually fried but I made it in paniyaram pan to make the healthier version. You can also prepare them in air fryer.
This recipe serves 4 people.
Preparation time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
Manchurian Balls
2 cups finely chopped cabbage
1 grated carrot
1 cup chopped broccoli
2 mushroom finely chopped
2 tbsp corn starch
1 tbsp rice flour
2 tbsp besan flour
1 tsp each chopped ginger and garlic
2 tbsp soy sauce
1/4 tsp black pepper powder
Salt to taste
Oil for cooking
Other ingredients
5-6 mushrooms sliced
12-15 snap peas
Red and Yellow pepper - 1 each
Broccoli flower separated - 1 1/2 cup
1 big onion sliced
Ginger and garlic finely chopped - 1 tbsp each
2-3 green chilies cut in very small pieces
Soy sauce - 2 tbsp
Corn starch - 2 tbsp
Tomato Ketchup - 1 tbsp
White vinegar - 1 tbsp
1/4 tsp black pepper powder
Salt to taste
Oil for cooking
Procedure
1. In a bowl, mix all the Manchurian ball ingredients except oil. Make balls around 1 inch in circle.
2.1 Cook these balls in paniyaram pan with 2-3 drops of oil on low to medium heat until balls are golden brown from all the sides. It takes around 7-8 minutes to cook one batch.
2.2 You can cook these balls in air fryer. Arrange in tray, brush little oil on each one and air fry for 20 to 25 minutes on Air fry mode. Turn them every few minutes so they cook properly from all sides.
3. Keep aside cooked Manchurian balls.
4. To make stir fry, first chop all the vegetables and keep ready.
5. Heat oil in a big pan, add sliced onion, mushroom and finely chopped green chilies. Cook on a medium heat for 4-5 minutes or until onion are translucent stirring continuously. Then add peppers, broccoli and mushroom. Stir the vegetables and cook for 3-4 minutes.
6. Mix corn starch with 1/4 cup water, soy sauce, salt and black pepper powder and add to the pan. Also add 1 tbsp of ketchup and 1 tbsp of white vinegar. Add more water if needed so stir fry does not completely dry out. In 2-3 minutes add Manchurian balls and cook on low for 7-8 minutes so the sauce becomes sticky.
7. Serve this stir fry with steam rice immediately. This also perfectly paired with fried rice.
