Good morning friend! What a beautiful day, huh? I mean, we did wake up today, right? So much has happened around here this week, it's too much to share but we CAN talk food, so let's do that. My daughter in law brought it to my attention that the mac and cheese recipe on the website did not match what I make at home for the family each week (I've gradually changed over the years to the point that it's not even the same recipe any more), So I've updated it here: Southern Mac and Cheese Then, what's probably my favorite quick meal (I enjoy this one at least a couple of times per week, for sure). How to Microwave a Baked Potato. Sarah created this Cowboy Dip which she shared with us at family dinner last week, we discussed as a family and she made a few changes and came back this week with THIS FABULOUS recipe, and boy howdy did our cowboys show up! So good! I hope you give them all a try! _____________________________ HOT COOKING TIP OF THE WEEK I was talking with a friend last night and he was commenting about how he uses "Old Wine" (wine that's been uncorked and then didn't get finished and now it's been in the fridge a couple of weeks). (Frankly, I really never have this problem, but it's still a great tip). He said that its perfect for deglazing pans. So, you cook and your pan get meat bits stuck to the bottom? Let the pan get hot and splash 1/2 cup of old wine in the pan. The stuck on stuff comes right off and if you add a little chicken stock and a few herbs and salt you'll end up with a nice pan sauce. Let it cook down and thicken and you'll be happy! ______________________________ THREE LITTLE THINGS Trying to be more thankful for the little things so that I remember to also be thankful for the big ones.
______________________________ A FINAL WORD Yesterday was one of the worst days I've ever had honestly. Several really horrific things happened and a few less horrific but still difficult and hard. It isn't often that more than one horrific thing and several awful things happen all on the same day. But hey, I got through it. You know what got me through it (other than family and friends)? Remembering the fruits of the spirit and settling there. Being thankful for relationships, my peace and my Lord. Trying to find my own joy, peace, kindness, faithfulness, generosity, gentleness and self control in everything. I'm so thankful for you and the wonder you bring to my life. You have shared the website with your friends, this newsletter with your loved ones and have told people about recipes you've seen here. You've taken recipes to pot luck dinners and shared the recipes through the website. All of that has allowed me to make new friends and find new places to participate.
