The Oats I Travel With + 10 More Healthy Breakfasts, Homemade Ricotta & More

Last weekend, while up in the North Country for my daughter's hockey, I discovered that the parents staying in the room directly across from me had traveled with their Nespresso machine.

I had been lamenting the bad coffee that is the reality of most of these weekends away, when two of the parents turned to me, sharing their secret. Stop by tomorrow morning, they told me. We'll brew you a cup.

These are my people.

I had nothing to offer in exchange, except for my overnight chia oats, which they politely declined. I have started traveling with these oats thanks to someone who wrote in saying she brings the dry mix on work trips and uses the hotel milk, which allows her to have "a delicious breakfast sorted for the rest of the week." So smart.

On these weekends away, where nearly every meal is eaten out (and when I don't always find myself in the company of such savvy packers), I find it so comforting to start the day, at the very least, with a good, healthy breakfast.

If you've never made ricotta from scratch, you're in for a real treat — it couldn't be simpler, and it tastes vastly better than what you can find at most stores. I hadn't made it in ages but made a batch last week and was reminded of the joys of both making and eating it. Find the recipe here:

Incidentally, in Friday's pizza newsletter, I wrote about ricotta and this pizza, where the ricotta is added post-bake to preserve its creaminess and flavor:

Thank You

Thank you to all who have already pre-ordered my new cookbook, Pizza Night. You've likely heard this before, but pre-orders are so important — they signal to bookshops and other retailers that there's excitement about this book, which in turn encourages them to stock their shelves with it.

If you are new here, Pizza Night will be published on April 16th and includes 52 pizza and 52 salad recipes, one combination for every week of the year, as well as five simple desserts.
