I don't spend hours meal prepping, but I do prep a few things every weekend to make sure we aren't scrambling during the week. Life is busy and a little prep can go a long way!
Today, I am sharing some of our Favorite Meal Prep Recipes that will make your life easier! I included ideas for breakfast, lunch, dinner, and even a few snacks/treats!
And don't worry, you don't have to spend your entire weekend cooking. Pick a couple of recipes to prep each week and it will make a huge difference!
Breakfast
- Overnight Oats- easy to customize!
- Egg Muffins- these are freezer friendly!
- Baked Oatmeal- my apple cinnamon version is good too!
- Breakfast Burritos- my boys LOVE these!
- Cottage Cheese Frittata- packed with protein and veggies!
- Breakfast Casserole- I love this veggie one too!
- Breakfast Cookies- cookies for breakfast? YES! They are made with wholesome ingredients! I always keep a stash in our freezer!
- Breakfast Sandwich- make ahead and freeze!
- Muffins- healthy banana, zucchini, or healthy pumpkin muffins are a few favorites and freeze well too!
Lunch
- Easy Chickpea Salad- my personal favorite!
- Roasted Vegetable Quinoa Bowls- see my tips for roasting vegetables!
- Kale Salad- the best!
- Easy Quinoa Salad- I've been making this one for years.
- Sesame Noodles- better than takeout!
- Roasted Cauliflower Chickpea Salad- great flavors!
- Egg Salad or Avocado Egg Salad- always hits the spot!
- Chickpea, Avocado, Feta Salad- only takes 10 minutes to make!
Salad Dressings
I make homemade dressings every week to use on salads and bowls. They are easy and so much better than store bought!
- Basil Vinaigrette
- Tahini Dressing
- Balsamic Vinaigrette
- Creamy Cilantro Lime Dressing
- Caesar Dressing
- Quick Pickled Red Onions- not a dressing, but these add flavor to just about everything! I love having them in my fridge.
Dinner
- Greek Chicken Bowls- so fresh!
- Meatballs- chicken, pesto, teriyaki chicken, or Greek. Add to pasta, salads, wraps, sandwiches, rice, etc.
- Burrito Bowls- we make these all of the time!
- Baked Ziti- make a pan and reheat!
- Stuffed Sweet Potatoes- you can bake the sweet potatoes in advance!
- Barbacoa- use to make tacos, quesadillas, burritos, & salads.
- All the Soups- soups are perfect for meal prepping!
- Bean & Cheese Burritos- freezer friendly!
- Enchilada Bake- 10/10!
Snacks:

- Homemade Granola Bars- I have a nut-free version too.
- Peanut Butter Protein Balls- another easy little treat! The peanut butter and chocolate combo is the BEST!
- Whipped Cottage Cheese- use as a dip for veggies or crackers, spread on toast, or enjoyed with fresh fruit and a drizzle of honey.
- Chia Pudding- so good with fruit and/or nut butter!
- Hummus- a staple in my fridge. Great with veggies, pita bread, pita chips, or crackers!
