Lighter Recipes To Start The New Year

The holidays can be a little rough on the waistline. Now that I'm in my 50s, I'm finding it much more important to really pay attention to what I eat. I still enjoy the foods I love, but if I indulge one day, I try to really eat healthy the next few days.

Here are some healthier choices to get off to a great start in 2024. They will make it easy to stick to your New Year's Resolutions.


Crock Pot Spicy Vegetable Beef Soup is a hearty and satisfying soup full of browned ground beef, potatoes, and vegetables in a wonderful tomato broth.

Spaghetti Squash Jambalaya is a low carb and healthy way to get your jambalaya fix. Using spaghetti squash instead of rice makes it a healthier meal without sacrifing any of the flavor.

Healthy Avocado Sonoma Chicken Salad is creamy and crunchy and loaded with good nutrition. Celery, red onion, and toasted pecans provide the crunch, a mashed ripe avocado and a little mayo give it plenty of creaminess, and halved red grapes add little bursts of sweetness.

Cheesy Turkey Meatloaf Muffins are wonderfully moist and flavorful. Their mini size makes them perfect when you are tracking calories.

This fresh Ginger Salad Dressing is a copycat of the dressing commonly served at Japanese Steakhouses and will jazz up an iceberg salad. It's tangy, a little sweet, and has tons of fresh ginger flavor.

Healthy Crock Pot BBQ Pulled Chicken has plenty of sweet heat flavor. Serve on top of a baked sweet potato for a deliciously healthy make-ahead meal.

Baked Parmesan Salmon is one of my favorite ways to cook salmon. Salmon fillets are seasoned with lemon pepper seasoning, coated with mayonnaise, Parmesan cheese, and bread crumbs and then roasted.

Spaghetti Squash with Spicy Meat Sauce is a healthy, low carb and gluten free meal that still tastes like delicious comfort food.

Slow Cooker Chicken Zoodle Soup is a wonderfully healthy low carb soup made with zucchini noodles instead of pasta. You'll get plenty of protein and veggies with a bowl of this hearty soup.

Cauliflower Jalapeno Popper Soup is a rich and creamy low carb soup full of cauliflower, bacon, and jalapenos. This soup really packs the heat.

Tuscan Chicken Spaghetti Squash- this low carb meal is full of Italian seasoning, onion, garlic, spinach, basil, sun-dried tomatoes, and Parmesan cheese. One of my favorite spaghetti squash recipes of all time.

Green Bean and Yellow Squash Saute makes a tasty side for dinner. Easy to make, it's flavored with Italian seasoning, roasted red peppers, and a few crunchy pecans.
