We're still in the depths of winter (why so long, January?), and while we wait for the season to eventually turn the page, all I can think about these days is one thing: SOUP.
There is nothing I want more after a long day of work or an afternoon playing in the snow than a cozy bowl of something delicious, steamy, and nourishing. Of all the soups in the world, these are the ones I've been making time and time again.
#1: Spicy Peanut Soup with Sweet Potato + Kale
"THIS SOUP, it's soul-warming, lightly spicy, and a bit crunchy. I love this soup so much. I proselytize it to anyone who will listen."—Alisha
"Wow!! For something as simple as tomatoes and beans, this soup was full of depth and flavor. My husband said 'You're definitely making this again, right??' Absolutely!"—Lisa
"SOOOO delicious! I didn't even have all the ingredients and it came out so beautifully. I had made it for my mom a few months ago; and she's been begging me to remake it ever since. So I'm making it for us tonight. Can't wait to re-live this meal."—Journi
"This is phenomenal. We could not believe the flavor in this soup. My 9-year-old declared it was the best soup she has ever had, and my picky 5-year-old ate two bowls which never happens."—Micca
"I made this last night, and my little family LOVED it! My son said, 'I don't like celery or cabbage but I love this soup!' It was great with crusty bread."—Erica
"Look, I NEVER comment on recipes…but I just have to share my deep love and appreciation for this soup and say that this recipe is hands down one of the best I have EVER found in my lifetime! I discovered this recipe sometime in Fall 2022 and have been making it in the instant pot on an almost weekly basis since. Peanuts, extra lime, and Thai basil just take it to another level."—Kelsey
"I made this last night and it was just delicious. Indescribably delicious. A lot of complex flavors in such a short period of time. It was sooo worth the extra effort of making the mushroom broth, thank you for sharing that advice. Cannot wait for leftovers today!"—Brittni
"HOLY COW. Don't even second guess it. Don't even hem and haw. Get your bottom in your car, buy the ingredients, and celebrate that you're a winner at life. This recipe is for champions."—Corry
