As we slide into the back half of summer, those zucchini harvests are going wild and there is no better time to get these irresistible zucchini pickles into your fridge!
I first shared this pickle recipe waayyyyyy back in 2015 and it has been a late-summer favorite ever since.
No specialty canning equipment or extra steps are necessary for these wonderfully crisp, sweet, and spicy pickles. And for those that prefer mild flavors, simply omit the crushed pepper flakes, no other changes necessary!
