Shrimp Burgers

Straight from one of my favorite cookbooks, Foolproof Fish, by the ever-reliable America's Test Kitchen, these shrimp burgers have quickly become one of my favorite new recipe finds.

A Southern coastal favorite, they're made from just a few simple ingredients: chopped raw shrimp, mayonnaise, chopped scallions, salt, pepper, and cayenne. To achieve that irresistible crunch reminiscent of fried seafood, the patties get a panko coating and are sautรฉed to golden, crisp perfection. The best part? You can make them in under 30 minutes. And if burgers aren't calling your name today, just ditch the buns—the patties also make delicious shrimp cakes!

You can never go wrong with simple boiled corn on the cob, but the need to cook it right before serving makes it less than ideal for entertaining—unless you relish the idea of sweating over a hot stove indoors while your guests kick back outside sipping summer cocktails.
