Hi friends, and happy Saturday!
This weekend I'm laying low, since the following weekend I'll be traveling for the holidays. Lots of laundry, catching up on work and a little meal prepping.
I hope you have a lovely weekend, and find some recipe inspiration below!
This Pistachio Cake is nothing short of perfection! Made with real pistachios and without food coloring, then topped with a mascarpone frosting and extra pistachios, it's an easy one-layer cake that you'll want to make for every special occasion! This is seriously my new favorite cake recipe and I am obsessed with that frosting!
This easy Edamame Salad makes eating the rainbow fun! Edamame, black beans, corn, tomatoes, and red onion are dressed in my spicy avocado dressing. Enjoy it as a quick and refreshing summer salad or party dip to serve with tortilla chips. This is such a refreshing summer recipe perfect for weekday lunches or a light dinner!
Start your morning on the right foot with these protein-packed Cottage Cheese Pancakes! Incredibly moist and fluffy with a subtle tanginess and a rich, creamy texture, they're unlike any pancake you've had before. These pancakes are flavorful and add so much protein to start your day off right!
It doesn't get much easier than this Peanut Chicken Skillet! The chicken is cooked in the skillet, then tossed in a simple peanut sauce and sprinkled with cilantro. The whole dish comes together in 10 minutes, and it makes for the best leftovers. So incredibly easy and quick to make which honestly just makes me want to make this more and more!
A hot cup of coffee just isn't the same without Almond Biscotti for dunking. Coated in chocolate and loaded with rich nutty flavors, this classic Italian cookie is the ultimate treat to pair with coffee and tea after dinner. There's nothing better than the almond flavors of the biscotti mixed with the chocolate covering the tops of each biscuit!
A quick and healthy Caramelized Onion Dip that's made with Greek yogurt and of course, caramelized onions. Serve it with carrots, cauliflower or your favorite crackers for an easy appetizer. Perfect for a summer party or just a small get-together with friends!
If you make any of these recipes, be sure to leave a comment and star rating on the blog and let me know what you think – I love hearing from you!
