The sun has been shining; I had a few days off for my sister's wedding; I've become addicted to our new chocolate peanuts; we just got our first US listing confirmed; I went to Skye's 'graduation' from nursery (big school starts in September) and have finally finished testing recipes for our new book - June has been a great (whirlwind) month! Work wise the highlight has definitely been shooting my new cookbook. I've been busy testing and writing for months and I can't tell you how exciting it feels to bring those ideas to life. I've bought the girls to set a couple of times, which was heaven, although May decided to take all of her clothes off and run around the office totally naked for a few hours! We've also been busy planning our new summer supper club series at the restaurant and getting ready to launch a few new Deliciously Ella snacks (hello cacao and orange oat bars!). | Having spent 10 years saying I don't like matcha, I'm now obsessed with matcha. Made with a little vanilla, hazelnut milk and a splash of maple, it's genuine heaven and gives me a smoother, calmer energy boost than coffee. METHOD: To make it, I blend ⅔ of a teaspoon of matcha powder with ½ teaspoon maple syrup, a few drops of vanilla (or ¼ teaspoon vanilla powder) and hot water - never use boiling water though, it'll burn the matcha and ruin the flavour. Then froth hazelnut milk and pour over the top. For an iced version, simply pour the blended matcha mix into a cup filled with ice and hazelnut milk. | |

| With summer finally here in the UK, I'm switching up a lot of my meals and cooking light, fresh, seasonal recipes that are making me feel so good. | Salsa verde traybake This salsa verde traybake is my new staple, super easy mid-week supper. The sauce is really 10/10, so I've been making double and pouring it over everything! Roasted veg & tofu bowl with wasabi dressing I love a simple veggie, quinoa, tofu bowl, but adding the wasabi dressing to this dish makes all the difference, suddenly these simple ingredients feel deliciously zingy and tangy! | Plants Miso Dressing This is a life saver, I use it non-stop to add instant flavour to whatever I'm cooking. I've also been using it to marinate tofu, which tastes amazing! Especially quickly popped on the BBQ. Easy Berry Flapjacks The girls love them, they take 5 mins to prep and they're fab little picnic additions too. | |
