Hello reader Happy June. It's the first day of summer today, according to the meteorological seasons. And wow does it feel like it. When the sun is out, it's hot. With that in mind, this week's recipe is for aubergine yakitori, in other words marinated chunks of aubergine grilled on skewers. I say grilled, but I actually cook them in my air fryer. It's easy to make and so delicious. Perfect for summer barbecues and alfresco dining. You can eat the aubergine straight off the skewers or serve them on a bed or rice for something more substantial. We like them with edamame beans for a protein hit and a lightly pickled carrot salad for freshness. Do you look forward to eating outside at this time of year? I have to confess we don't have a barbecue, preferring to cook indoors and then take it outside. Is barbecuing your thing? If so, what sort of vegan or veggie foods do you like to cook on it?
