Some recipes stand the test of time, and Cucumber Tomato Salad with BEST EVER Italian Vinaigrette is one of those recipes. I've been eating this fresh and simple side dish each summer since I was a kid, when my Mom made it using what she grew in her garden. I'm thrilled to pass on the tradition to my kids in the here and now (uh, minus the garden - this Mama's got a black thumb!)
No matter where you source your veggies — the garden, farmer's market, or grocery store — they are highlighted by my perfectly puckery, homemade Italian Vinaigrette. Gwen calls it "Mama dressing" which warm my heart to no end. It is SO good.
This easy "recipe" (if you can even call it that!) will liven up any dinner, and pairs especially well with grilled or sauted protein. Give it a try tonight?
