Your Weekly Meal Plan & Update From Organize Yourself Skinny (May 1st)

Hey there reader!

It's been a while since I sent a weekly meal plan. Over the last year, there has been a lot going on behind the scenes here at Organize Yourself Skinny, and I've spent a lot of time updating the blog and thinking hard about the best way to serve you.

Anyway, I discovered that you like these weekly meal plans, and to be honest; I miss sending them. It allows me to check in with you and write without worrying about the Google, Pinterest, or Facebook algorithm, and I can talk directly to you - my reader.

In this Sunday newsletter, you can expect to get a quick recap of my goals for the week, and I'll put together a curated list of recipes for you to try.

I'm not going to share my exact meal plan because I eat many of the same things every week with some new recipes. Instead, I'll comb through the OYS recipes and pull together some recipes I think you should try.

Let's get started!

Goals for this week.

  • Drink a smoothie every day. Last week, I stuck to my daily smoothie and felt terrific.
  • Eat a mason jar salad five days a week. This keeps the veggie train going.
  • Add vegetables to dinner every night. Last week I made a bunch of roasted brussel sprouts and broccoli. I also purchase frozen organic broccoli. No matter what we ate, I also had 1-2 cups of veggies. I loved how my body felt getting in all those fruits and veggies every day.
  • Exercise at least four days a week. This week I want to push myself with cardio and toning. Some mornings I feel lazy and do the bare minimum. I want to SWEAT and feel it this week.

What's New?

This month is Celiac Awareness Month. I was diagnosed with Celiac a year ago if you didn't know. As a food blogger, I'm sure you can imagine the challenges I dealt with. Anyway, all of the recipes on the Organize Yourself Skinny blog moving forward are gluten-free, but you can easily adapt for those who can eat gluten.

I ate relatively clean and gluten-free already, so I wasn't overly concerned about adjusting my diet. But, something I was worried about was giving up Italian food. I come from a big Italian American family, and I LOVE enjoying all kinds of Italian recipes on the weekends, especially Sunday dinners.

Over the last year, I learned a lot about gluten-free Italian cooking - and I've become quite good at it.

So much so that I started a brand new blog Gluten Free Italian Eats. All of the recipes on this site are gluten-free. If you are gluten-free and miss Italian food, join me there.

6 Recipes to Try This Week

Later this week is Cinco De Mayo, and Mother's day is on Sunday, so I pulled together some recipes to fit those holidays. Of course, I'm also adding some everyday healthy recipes to help you feel your best, along with a family Sunday dinner recipe

This is a super easy taco dip to whip up if you're heading to a Cinco De Mayo party this week.

This bolognese takes time, so it's perfect for making on the weekend. It's so delicious and naturally gluten-free. If you want a lighter version, then check out my turkey bolognese. But if you want an authentic bolognese to serve for a weekend family dinner, you have to make it.
