Your Ambitious Menu Breakfast: Mushroom Spinach Bacon Egg Cups Perfectly customizable egg cups tucked in a piece of bacon (for good measure). These are so easy to prep and enjoy during busy weeks! Lunch: Asian-Inspired Chicken Soup An AK team and reader favorite! Deliciously savory broth, tons of veggies and herbs, plus tender chicken. Feel free to add noodles (Abra's go-to) or even swap the chicken for tofu or chickpeas to make it vegetarian!  Snack: The Best Vegan Banana Bread You'll Ever Eat One of my fav banana breads to make for breakfasts & snacks. It sweetened just with bananas (and chocolate chips, yum) and has healthy fats & protein for a satisfying afternoon snack!  Dinner: Chipotle Black Bean Roasted Veggie Enchilada Casserole All of the amazing flavors of your fav veggie enchiladas with even less prep time! This enchilada casserole is packed with protein & veggies and is freezer-friendly for a wonderful dinner.  Dessert: Paleo Chocolate Chip Tahini Blondies You may have had my famous tahini brownies before but did you know that I also have tahini BLONDIES?! Oh yes. They're equally as gooey with melted chocolate in every bite, and are gluten, grain & nut free!
