~ My Beloved Repeats ~ If the recipes I put on repeat pretty much every single week make me a boring cook, well then so be it. The thing is, I repeat not out of ease (well, kinda), but because we love these dishes that much. They've become our little warm blanket that we need to rub on a cheek regularly for all of the comfort they give: Roasted Chicken: The roasted chicken keeps us sane, and mixing it up with croutons and fattoush salad? This satisfies a craving I have that always needs fixing. Dan recently gave me a tagine and am experimenting with that for our roasted chick. Will keep you posted. Sheik al Mehsheh, Eggplant Tomato Casserole. Deeply soft and melty eggplant melded with savory ground beef/lamb and onions, tomato sauce. My mouth waters in the telling. Laban Khiyar, Yogurt Cucumber Salad. Cool and crisp, we need this with the eggplant dish and the Mujadara. I also love a scoop for lunch, gets me my calcium and satisfies. Mom's Special Rice. Also for the eggplant and great side with any protein. Mujadara, Lentil and Bulgur (or rice) pilaf. The onion-laden joy that flavors. this dish nearly overshadows the perfect protein combo. We always have a salad with this, ideally arugula.
The rest of the week is up for grabs, maybe some pork chops, lots of salads with cut up meat/chicken/legumes in it, that kind of thing. I know this: I don't make enough fish. I have Asian food cooking goals that remain unmet. Probably don't need to make dessert or bread so often as I do. But in the end, our way, our Lebanese Mediterranean way even on weekly repeats, is keeping us healthy + happy. | |
