~ The Fatayar Tradition ~

Lebanese fatayar, or fatayer, (fuh-TIE-uh) are small savory pies with delectable fillings. Fatayar are found in bakeries everywhere in Lebanon and in Lebanese bakeries in our communities around the U.S. Growing up, my mother and grandmothers used various techniques, including frozen Rhodes dough balls for quick-fatayar. Those become puffier than we'd like--fatayar is not meant to be bread-y, but they were still soooo delicious out of the oven.

This week we'll get after the finer points of fatayar making, including tricks for perfect dough and the technique to keep the little triangles closed. What burning questions do you have about Fatayar? Let me know!
