Here's your Meal Plan + Gift Ideas! 🎁


Happy December!

I hope this email finds you well, and that you're staying warm wherever you live. We had a nice week of weather here in Kansas, but now the temperature is starting to drop again!

Speaking of, don't forget about my 3-ingredient Blender Hot Chocolate, which is fruit-sweetened, or you can make my more classic Hot Chocolate for a stove-top version. They are perfect drinks for warming up during the winter months!

Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Easy Peanut Noodles. These creamy Peanut Noodles are about to become your new favorite dinner! This recipe is fast and flavorful, with plenty of veggies hidden inside.

Monday: Spring Rolls with Peanut Sauce. Thai Spring Rolls are a delicious way to eat more veggies, served with a homemade peanut sauce for dipping. They are basically a hand-held way to eat a salad, all wrapped up for convenience, and are served fresh, not fried!

Tuesday: Zucchini Lasagna. Zucchini Lasagna is a delicious way to enjoy the lasagna flavor you love, without the noodles. It's perfect for those following food combining, or a low-carb or keto diet plan, and it's naturally gluten-free.

Wednesday: Vegan Quinoa Salad. This Vegan Quinoa Salad is one of my favorite make-ahead lunches. I love how it's loaded with a variety of crunchy veggies and is a complete source of plant-based protein!

Thursday: Sun-dried Tomato Pasta Salad with Chickpeas. This Sun-Dried Tomato Pasta Salad is a flavorful make-ahead lunch. It's bursting with fresh Mediterranean flavors, and packs a hefty serving of plant-based protein in each bite.

Friday: Vegan Corn Chowder. Vegan Corn Chowder is creamy and comforting, made without gluten or dairy. I use a bag of frozen corn to make this recipe as fast and easy as possible, but you can use fresh corn sliced off the cob, if you prefer!

Saturday: Day off from cooking! (Leftovers or take-out)



Holiday Dessert Ideas

Almond Flour Chocolate Chip CookiesThese Almond Flour Cookies taste remarkably like the cookies I grew up eating, with a chewy texture, but these are naturally gluten-free and grain-free!

Vegan Hot Chocolate. This Vegan Hot Chocolate is ultra-creamy and made with just 3 ingredients. It makes a rich and delicious treat!
