Winter isn't over yet!


Winter is far from over—where I live at least! We had the biggest snowstorm of the season just two days ago and I know we've got lots more to come (and shovel!) If it's cold where you are too, I bet you're in no rush to put away the hearty cold-weather dishes just yet. I know I'm still enjoying piping hot soups, spicy meatballs, comforting risottos, and hand-warming hot drinks!

Can a dessert warm you up, too? Of course, it can! If we get to hibernate a bit longer, I am definitely making that Chocolate Meringue Pie once more.

This Curried Squash Soup with Lamb Meatballs sure is a tummy-warming dish. With its Indian-inspired spicing and chunky meatballs, it will fill you up and keep you warm. You can serve it with crusty bread or warm naan and a light side salad for a complete dinner.

This is a big recipe—it makes 12 servings of soup and freezes like a dream. So this weekend, make a big pot and put aside a few meals for busy nights where you have a lot on your plate. Any variety of squash will work: pumpkin, butternut, or acorn all work great!

Wild Mushroom Risotto is an ultra-creamy, comforting dish that delightfully highlights the earthy flavor of mushrooms. While my mushroom of choice for this dish is chanterelles, I certainly have no patience to wait for chanterelle season to roll around to make this risotto. In this risotto, any mushroom will do and the dish actually benefits from a mix of varieties. The secret is in dry cooking the mushrooms: it really brings out the nutty flavor in a way you won't experience with normal sauteeing in oil or butter. You'll definitely want to give this cheesy, gooey dish a try!
