Our plant-based version includes layers of roasted eggplant that meld perfectly with a hearty tomato lentil filling and show-stopping roasted garlic cashew bechamel. Flavor is abundant despite the 10 simple ingredients required. It's a hearty entrΓ©e perfect for meal prep or impressing dinner guests (solo dinner parties welcome)! While delicious on it's own, this moussaka would pair well with our Grain-Free Tabbouleh Salad, 5-Minute Green Salad, and/or your favorite roasted vegetables (like Brussels sprouts, butternut squash, carrots, or potatoes).
