And around this time of year, one of Spain's seasonal pastries begins to appear: it's torrijas time!
What are torrijas?
A cross between French toast and bread pudding, this Spanish Easter sweet is the perfect dessert. There are countless versions, but each starts with slightly stale bread.
The bread is then soaked in a liquid (milk infused with citrus and spices, syrup, or even wine), covered in beaten egg, and fried in olive oil.
Then it gets covered in cinnamon and sugar, honey, or even chocolate! There is truly a torrija for every taste.
