Minced pork rice (or "lurou" rice) is a classic Taiwanese dish that I somehow completely missed during my 4-month internship in Taiwan almost 20 years ago (probably because I was repulsed by fatty meat back then). It wasn't until very recently (5 years or so) that I began to accept fatty meat and even liking it...if cooked properly, that is. The minced pork is usually a mix of 70% lean meat and 30% fatty meat, the perfect ratio for any kind of pork filling, really. And the sauce here was so flavourful and truly the soul of the entire dish...very satisfying!
