🗓️ How to Use the Mini-Prep Dinner Plan
Each week, I'll send you three simple dinner recipes you can prep in about two hours on Sunday (often even less). These aren't complicated — just real-life meals designed to help you:

This Week's Mini-Prep Dinner Plan
👉 Pita Pizzas. This is one of my all-time favorite "almost no-prep" dinners. There's always one night a week where I'm just done - and that's pita pizza night!
Use jarred marinara, shredded cheese, and your favorite toppings. Go classic with cheese and pepperoni, or use leftovers, such as shredded chicken, taco meat, or even veggies. The link includes tons of topping ideas!
👉 Crockpot Shredded Chicken. This is my go-to meal prep recipe and something that's almost always in my fridge.
I cook a batch on Sunday, shred it, and use it all week — in rice bowls, salads, wraps, tacos, or even mixed into one-pot meals. It's simple, versatile, and everyone in my house loves it.
👉 Crockpot Taco Filling. Sure, stovetop tacos are easy, but crockpot tacos are effortless. This recipe makes a big batch, perfect for busy weeks or for freezing extras. Use it for tacos, nachos, burritos, or taco salads. It's another great meal starter that keeps dinner stress-free and flexible.
✔️ Start with the shredded chicken. Get it in the slow cooker first thing in the morning so it can cook while you do other things. It usually takes about 4–6 hours - I pull mine at around the 5-hour mark. Once it's done, shred it and store it in the fridge for the week.
✔️ Next, prep the taco filling. If you have a second slow cooker, cook it on Sunday too! Otherwise, assemble all the ingredients in a bag or container so it's ready to dump into your slow cooker during the week.
✔️ Finish with pita pizzas. These don't require much prep at all, just make sure you've got pita bread, sauce, cheese, and your favorite toppings on hand. They're perfect for nights when you want dinner ready in 10 minutes.

Healthy Sweet Potato Casserole. If you're still finalizing your Thanksgiving menu, this is the must-make recipe. I shared it earlier this week, but it's worth repeating! It's lightened up but still creamy, flavorful, and topped with a crunchy oat-pecan streusel that everyone loves. I make a double batch every year because it always disappears fast
Sunday Sauce (Family Recipe). If you want to bring a little Italian-American flavor to your Thanksgiving table, you need to try this one. This is my family's Sunday sauce recipe - passed down from my great-grandmother to my mom, and now to me. It's slow-simmered, rich, and filled with flavor from the meatballs, sausage, and pork.
Use it with your lasagna, baked ziti, or just serve it on the table with fresh bread for dipping. It's a true classic.
