We're heading into summer, which means more fresh veggies and herbs are stepping into their prime. Because they're widely available, super-flavorful, and relatively less pricey than other times of the year, I have this recipe for simple, flavorful skillet caprese chicken bites for you.
Juicy, ripe tomatoes are a summer staple, and they also happen to be low in carbs. Partner cherry tomatoes with seared, juicy chicken bites; pockets of melted fresh mozzarella; and a touch of balsamic glaze (that transforms into the most irresistible, brightly flavored sauce!) for a one-pan dinner that hits the table in 30 minutes. Best of all, even if your tomatoes are already great, their short stint in the skillet is just enough to concentrate their natural sweetness and make them even more flavorful.
