No matter the time of year, it seems I'm always in the busy season. Seriously, though. Even with my kids in college now, when they come home for holidays or break, it's like we are back into go mode!
There are only three ways I can survive dinner time during my busy season:
Prep meals ahead of time.
Freezer cooking.
Easy recipes.
Today I want to share these ⭐️⭐️⭐️⭐️⭐️ one-pan steak fajitas, which are super easy to make AND can be prepped ahead of time. I have this recipe on constant rotation throughout the school year.
You can eat them in a tortilla, over brown rice or cauliflower rice, or grab a fork and dig in. If you want, make a steak fajita bowl on Sunday to heat and eat all week for lunch or dinner.
