If you're looking for some low-carb crockpot recipes to add to your weekly meal plan, I've got you covered! Before I jump into the recipes, here are some tips to keep them low-carb:
✅ Serve with low-carb wraps or in a lettuce wrap.
✅ Serve over a salad.
✅ Serve with roasted or steamed vegetables.
These recipes can be prepped beforehand, and I'll offer some meal prep tips to make your life easier.
➡️ First up is the Crockpot Shredded Buffalo Chicken. This recipe only needs to cook for 4-5 hours, so it's best to prepare it on the weekend and then store it in the refrigerator for meals all week. We love this in wraps or in a salad.
➡️ Next is the Slow Cooker Shredded Salsa Chicken. This is one of my personal favorites because it only requires 2-3 ingredients, depending on what you have on hand. Like the Buffalo Chicken, it's best to make it on the weekend to have ready for meals during the week.
👉 You can make low-carb burrito bowls using cauliflower rice or make quesadillas using low-carb wraps.
➡️ The Slow Cooker Sausage and Peppers is another great option. This recipe cooks for 6-8 hours, making it perfect for a weekday meal. Leave the hoagie out to keep this recipe low-carb. Keep this low-carb by serving over zucchini noodles.
👉 You can also prep this recipe 1-2 days ahead of time in the crock and then turn it on the morning you're going to make it.
If you're looking for a little variety, both the Slow Cooker Mexican Beef and Slow Cooker Italian Beef are perfect for cooking all day while you work.
👉 These recipes need between 8-10 hours, and like the other recipes, you can serve them with low-carb wraps or in a salad to keep them low-carb. You can prep them a night or two before making them or prepare them in a slow cooker kit. You can store in the refrigerator for 2-3 days. Or freezer into a freezer kit.
