Cilantro Pesto​ ​My new favorite shade of green. Lindsay Ostrom January 24, 2025 Hi reader, This chunky green sauce has become a real BFF. It's limey, a little spicy, and did I mention chunky? The cilantro and lime and jalapeño lead the flavor parade, but the real hero here is the pistachios. They give it a buttery, salty, almost roasty flavor but also preserve just the right amount of thick chunkiness to make it interesting to spread / dollop / eat. I've been spreading it on scallion pancake egg wraps, dolloping it on chicken bowls (recipe coming soon!), and I even put a spoonful of it on top of my chicken noodle soup yesterday. Sue me. There are no rules here and the possibilities are endless. I think you'll love it.
