I really love all of the emphasis on the Mediterranean way of eating (the "diet") that takes center stage every January. Even for us, eating this way all the time, the highlight can be a way of getting even more goodness on the table and into our bodies more often. I consider one of the core, truly vital cornerstones of this way of eating to be summed up in a word (or a photo).
