Those are my grandmother's words, not mine! The woman had a famous sweet tooth, though she rarely ate sweets, even those she made. Discipline! Wow.
I'm not here to say that brownies and cakes are an important part of the Mediterranean diet. But I am here to say that when we bake with healthy fats--olive oil and yogurt--good things come to life! They impart flavor and tenderness wherever they go.
This is where the "everything in moderation" mantra comes into play. We can enjoy a brownie once in a while. Sharing them is a feel-good experience too. My recipe is made with olive oil and dark chocolate. Simply put: They're wonderful.
EVOO Brownies come together really easily, bowl and spoon. See the dark chocolate chips in there? Don't leave those out! Use an 8-inch pan and cut 16 brownies from that.
This lemon loaf cake gets a double hit of goodness with olive oil and yogurt in the mix. It's so fun to make, using a lemon zest-sugar mixture that is so aromatic it's worth making just to experience that....
Is it okay if I say, in all caps: DO NOT MISS THIS CAKE! Yes, that's a rich buttercream on top, but you can leave it off if you please (I don't please!). The cake is loaded with flavor, including fruity olive oil.
