Good Morning Beautiful! How are you on this fine crisp morning? I'm finer than frogs hair! I know that I have friends who read this newsletter from the mountains of Appalachia and the beaches of Florida who may not be so fine this morning and I want you to know that I am keeping you in my prayers and in my heart. I've got other irons in the fire regarding helping with the efforts but am keeping that under wraps for now. Anyway, as Mr. Rogers said, "look to the helpers". Perhaps you can be helper? What are some recipes that you can share with your neighbors easily enough? Here are a few that freeze or keep well and then just need a little heat up and you are good to go. This irish stew is hearty, healthy and easy to make. Definitely delicious. Freezes just fine. If you can't find Guiness Beer, use some strong black coffee 1/2 and 1/2 with any other kind of beer. This Grandmas' Poppy Seed Chicken is a perfect comfort food to share with friends. I haven't met anyone who doesn't love it. It freezes fine and you can dip out of it and eat on it for a couple of days. Cowboy Lasagna is one of the most popular recipes on the website and has been for years and years. It is a hefty dish that feeds an army. It freezes like a champ and the leftovers are more tasty than when it's first served, no joke. I have no idea why it's called cowboy lasagna, it just is. ___________________ HOT COOKING TIP OF THE WEEK I feel like I've said this tip about a million times but I had someone ask me last week so maybe I need to say it again. Have you ever tried to fry something like chicken, zucchini, green tomatoes, etc and the breading just slips off in the pan while it's cooking? isn't that infuriating? you bet it is! Here's the secret. Lets start with what causes that. Steam causes that. The juice inside the ingredients comes out, heats up into steam and as it leaves the ingredient it blows the coating straight off of the thing! How to fix this. Make sure that your ingredient is as dry as possible before you start. If it's a vegtable, like zucchini, squash, egg plant or green tomatoes, salt them well and lay on layers of paper towels. Allow to sit this way for a half and hour at least. Then turn over, put on dry paper towels and repeat. Then you can apply your coating and fry. With meats like chicken or cube steak, dry well with paper towels, salt and allow to drain on paper towels for 30 minutes. Then apply the coating (wet or otherwise) and fry. It will turn out much better this way, trust me. ___________________________ THREE LITTLE THINGS I'm not 100% at this, but I'm trying to be better. I often suffer from "whoa is me" syndrome. So, i'm trying to be more grateful and thankful as this goes a long way to combat those feelings. I'm repeating it here so that maybe you will be reminded to be thankful as well. - I'm thankful for those who are brave enough to speak up against untruths.
- Thankful that it seems like hot summer weather is over.
- Grateful for days when I can stay at home all day long.
