Stir-fried hofan noodles with beef would probably be the most classic Cantonese wide noodle dish, but sometimes I prefer a simpler soy sauce chaomian with thinner noodles. Usually it's called "tri-colour" fried noodles, meaning it's made with sliced red sausage, yellow chives, and green onions. Craving well satisfied!
