SUMMER. It's coming. The land of longer days, dipping out early on Friday to head to the cabin, and picnic tables lined with all the potluck favorites. For me, that table must include a pasta salad in some form. But ideally, THIS pasta salad. It's bright and tangy and hearty and salty and it's the only one I need in my life this summer.
If You're Vegetarian: Omit the meat entirely or use chickpeas instead.
If You're Gluten-Free: Use gluten-free noodles or opt for a similar salad like this one that doesn't include pasta!
If You Want to Prep Ahead of Time: This tastes especially delicious when the flavors get to linger all together for a bit. I'd make it 12-24 hours ahead of time.
