A CHICKEN Recipe + A British DESSERT + More!

If you're looking for something that's healthy and nutritious, thoroughly delicious, is quick to make for a casual weeknight meal and elegant enough to serve to guests, these Chicken Roll Ups fit the bill! Chicken filets are spread with Dijon mustard, packed with healthy veggies and Swiss cheese (or cheese of your choice), cooked and then drizzled with a garlic-herb balsamic glaze.

Blueberry season is approaching and our blueberry bushes are laden with them. Aside from fresh eating I'll be making my usual blueberry jam. This blueberry jam is made without pectin or starches and is made with just 3 simple ingredients! This is a recipe I published just 6 months after launching my blog back in 2013 (has it really been that long??). Yes, the pictures are in desperate need of updating, but this oldie-but-goodie was a reader favorite back in the day (and now I'm just sounding OLD!) but it's simply too good not to share!

It's 100% whole grain, has no refined sugar, is made with olive oil, and is packed with nuts and quinoa. It's a wholesome cake you can enjoy without quite as much guilt, and no one will guess that it's "healthy!" Enjoy it for breakfast, as a mid-morning pick-me-up, or a late afternoon snack.
