It's May, life is busy, and… eating well feels hard? The drive-through is calling my name more nights than not lately because the convenience and the french fries are very appealing.
Good news, though: these flavorful bowls are amazing. Like, wholesome, versatile, and most importantly - you look forward to eating them once, twice, maybe multiple times throughout the week! I love a recipe that keeps me wanting to eat it again and again, and these are all that.
#1: Mediterranean Quinoa Bowls
"My boyfriend and I made this and we both loved it. The sauce was amazing. After he ate three bowls in a row, he continued to eat the sauce on everything all weekend." - Jamie
"So simple and delicious! I keep coming back to this recipe. I love that it can easily be adapted depending on what veggies you have on hand. I added julienned carrots and broccoli this time and it was super tasty!" - Kloe
"This may be one of my favorite meals EVER! I'm not vegetarian or vegan (love me a good steak), but I love variety in my diet, and this recipe is exactly that. The tofu cooks beautifully, and this may be one of the best sauce recipes EVER!" - Holly
"This recipe was delicious! Full of so many different flavors. I was looking forward to having it for lunch the next day, however my husband had THREE helpings, so NOTHING left over!" - Brenda
"I made this last night and I'm obsessed! And I managed to get a perfect pineapple at the grocery store. The sweet salsa, combined with the spicy refried beans, the rice, and this delicious crispy chicken was such a great combination. I will definitely make this again." - Aileen
"This recipe was out-of-this-world good! The spice of the chickpea mixture blended with the cool mint, cucumber, and yogurt was so delicious. We also topped our bowls with a little bit of feta cheese and some green olives. Perfect!" - Jennifer
