I wanted to share this Asparagus Risotto recipe with you. This recipe is so creamy and flavorful packing in fresh asparagus taste to start Spring off right! Asparagus Risotto Ingredients: 2 tbsp olive oil 1 large shallot, diced 3 garlic cloves, minced 1 teaspoon salt 1 cup arborio rice ½ cup dry white wine 1 lb. fresh asparagus, trimmed into 1-inch pieces and sliced diagonally 2 tablespoon butter ¾ cup parmesan cheese 2 tbsp chopped parsley 1 tsp lemon zest 1 tbsp lemon juice Salt and pepper to taste Directions:
