I wanted to share this Hamburger Helper recipe with you! It's got that delicious meaty and cheesy flavor to it just like regular hamburger helper but is made healthier and also just so happens to be vegan! It's such an easy weeknight comfort food recipe and I love it so much! I know you will as well!

Vegan Hamburger Helper
Ingredients:
1 tbsp olive oil
½ yellow onion, diced
2 cloves garlic, minced
1 lb. vegan ground beef or impossible meat
1 tbsp cornstarch
2 tsp chili powder
½ tsp oregano
2 tsp smoked paprika
1 tsp salt
¼ tsp black pepper
1 cup milk of choice
1 ½ cups vegetable broth
½ cup tomato sauce
2 cups rotini or fusilli pasta
1-½ cups shredded vegan cheddar cheese
Optional: 2 tbsp chopped fresh parsley, to garnish
Directions:
- Heat oil over medium heat in a large, deep skillet. Once warm, add the onion and saute for 3-4 minutes. Then, add the garlic and beef and cook until it's no longer pink, using a wooden spoon to break it up.
- Sprinkle the cornstarch, chili powder, oregano, smoked paprika, salt, and pepper overtop and stir to combine. Then, pour in the vegetable broth, milk, and tomato sauce and stir.
- Bring mixture to a boil, then cover and reduce to a simmer. Simmer for 8-11 minutes until the pasta is cooked.
- Sprinkle the cheese overtop and stir until it's melted. Sprinkle with fresh parsley and enjoy!
