I'm Richa, the face behind My Food Story. Welcome to this series where I send you an email exclusive tip/recipe every Wednesday! Here's today's Tip/Kitchen Hack: I've got a foolproof guide to making the most irresistible Crispy Fried Noodles right at home up on my blog! If you're a fan of those golden, crunchy noodles that accompany soups and salads at restaurants, then this recipe is about to become your new obsession. Here's a sneak peek at my top tips for achieving noodle perfection: - Choose thin noodles like Hakka, Lo Mein, or Ramen for that authentic texture. Thicker Udon varieties will not be as crisp because of the size of the noodle.
- Cook your noodles al dente or even slightly undercook it to maintain their firmness. Over-cooking the noodles will cause it to become too mushy.
- Drain and rinse the cooked noodles to prevent sticking. Rinsing the noodles helps it too cool down and prevents further cooking.
- Let them air dry for 30-45 minutes to eliminate any excess moisture.
- Dust your noodles with 2-3 teaspoons of cornflour for that extra crunch and to prevent clumping. This will also absorb any excess moisture!
- Deep fry or Air fry them until they reach a glorious golden brown.
- Once cooled, store them in an airtight container and savor their crispy goodness for up to 10 days!
But here's a word of caution: these addictive noodles may disappear within minutes of coming out of the deep fryer. They make a fantastic crunchy topping for soups, such as manchow, hot and sour, or wonton soup. You can also toss them into a Chinese chicken salad for that perfect lunchtime crunch.
