It's the weekend, so I just wanted to pop in and share some meal inspiration for you all! This weekend's plans include.... nothing. Ok actually, they include work mixed with nothing, so besides doing some recipe development and photography today, I'm hoping to spend a good bit of time reading tomorrow. After the craziness of the holidays, I tend to look forward to a slower January. I hope you set aside some time to relax this weekend!

This recipe came straight from Miguel's aunt. If you aren't familiar, pupusas are the national dish of El Salvador, and they're homemade tortillas filled with cheese and beans and yes, they are just as delicious as they sound!

When you need a healthy lunch recipe fast, you make these chicken tenders. They're cooked completely in a skillet and pair well with salad, rice or nearly any side dish.
Is there anything better than already having breakfast and ready to go in the morning when you wake up? NOPE. Simply put, it's the best, and this casserole is a great way to squeeze in veggies and protein.
