Have you ever opened up your refrigerator expecting leftovers and found nothing but a sad container of plain white rice? Me too, friends. Me too. Luckily, there is a super speedy way to use it up AND turn it into something you'll be excited to eat: Veg Fried Rice!
This naturally vegan fried rice is also a great way to use up any bits and bobs of veggies and herbs that are languishing in your crisper drawer. While I use a particular blend of mushrooms, peppers, cabbage, spring onions, green beans, and carrots, you're welcome to use any cookable veggies that need using. It's the perfect "clean-out-the-fridge" kind of meal!
