Mason Jar Salad Challenge Day 8: Antipasto Salad in a Jar ๐Ÿ‡ฎ๐Ÿ‡น

Can you believe we're at Day 8 (week 2) of the Mason Jar Salad Challenge?! It's incredible to see everyone's pictures in the Facebook group. I hope you're feeling the benefits of having lunch ready for the week and nourishing your body with a hefty dose of veggies daily.

Today, I want to highlight another oldie but goodie. This Antipasto Mason Jar Salad takes the popular Italian salad and layers it into an easy portable lunch. It's filled with Italian meats, artichoke hearts, roasted red peppers, pepperoncini, and tomatoes and topped with peppery arugula. I love using a homemade Italian dressing, but a high-quality store-bought will work just fine.

Cooking tips

The beauty of this salad is it's a no-cook recipe, so it comes together very quickly.

I use canned artichoke hearts in brine, but you can also use marinated artichoke hearts. Keep in mind this will increase the fat and calories in the recipe.

Also, I use jarred roasted red peppers to keep the recipe simple, but you can certainly make roasted red peppers if you choose. Or swap in raw red pepper and add it to the tomato layer.

Shopping Tips

You can find canned artichoke hearts in the canned vegetable section of the grocery store, and sometimes they are also near other Italian canned or jarred items.

Pepperoncini and roasted red peppers are located with the jarred olives and other condiments.

When purchasing the meat for this salad, I recommend choosing the highest quality available. I prefer to have the meats sliced very thin but have the meat cut however you like.

What other leafy greens can I use in Mason Jar Salads?

Any lettuce or leafy green will work in a mason jar salad, so use whichever one you like best. I switch it up depending on the recipe. For this antipasto, I like arugula or baby spinach. For a taco salad or caesar, I like crunchy romaine.
