One of my favourite vegan comfort foods. Silky white beans and flavorful broth for dipping.
| Happy new year! I always like to kick off January with a bean/lentil soup of some sort. A little wholesome comfort feels just right and is exactly what I'm in the mood for. Cooking beans from dried takes a little while, but it's mostly inactive time and the results are so, so silky and satisfying
My version of brothy white beans is deeply flavorful. Rustic cuts of onions, shallots, celery and garlic, along with herbs and spices are sautéed until lightly brown. Dried beans that have been soaked overnight go in along with vegetable stock. These simmer until the beans are soft. Miso goes in for umami-rich depth, and lemon adds sparkle. I like to finish with herbs and lots of black pepper.
