✅ Low-carb Crockpot Dinners to Prep This Weekend!

Hey there reader

I have a list of favorites if you're looking for some low-carb crockpot recipes to put on your weekly meal plan.

Before I jump into the recipes, I want to offer some tips to keep these recipes low-carb.

✅ Serve with low-carb wraps or in a lettuce wrap.

✅ Serve over a salad.

✅ Serve with roasted or steamed vegetables.

You can prepare all these recipes ahead of time, and I'll offer meal prep tips.

Crockpot Shredded Buffalo Chicken​

This recipe only needs to cook for 4-5 hours in the slow cooker, so it's best prepared on the weekend and then stored in the refrigerator for meals all week.

Slow Cooker Shredded Salsa Chicken​

This is one of my favorite recipes because it only needs 2-3 ingredients, depending on what you have. Like the Buffalo Chicken, this is best made on the weekend to have ready for meals during the week.

Slow Cooker Sausage and Peppers​

This recipe cooks 6-8 hours so that it would work during the week. Leave the hoagie out to keep this recipe low-carb. You can also prep this recipe 1-2 days ahead of time in the crock and then turn it on the morning you're going to make it.

Slow Cooker Mexican Beef and Slow Cooker Italian Beef​

Both recipes are perfect for cooking all day while you work, and they need between 8-10 hours. Again, serve with low-carb wraps or in a salad to keep it low-carb. You can prep this recipe a night or two before making it or prepare it in a slow cooker kit. You can store the kit for 2-3 days in the refrigerator or freeze it. If it's frozen, make sure it's thawed before cooking it in the crockpot.
