It's a fact that my Aunt Mary makes the best sausage and peppers her side of the Mississippi. 🤤 She bakes fresh Italian sausages from the local Italian foods store low and slow in the oven, smothered with her homemade Sunday gravy. They are SUCH a treat, and we try to replicate those flavors at home as often as possible.
One of our favorite ways to do that is with Italian Sausage and Pepper Ring Mini Meatloaves. Think Italian sausage-spiked meatloaf stuffed into thick-cut bell pepper rings, buried under marinara sauce and shredded mozzarella cheese, then baked.
They are SO GOOD!
