Such a mega flavourful, fun textured veggie side dish! (that could easily slide over to a main course)
This veggie side has so much going on flavour and texture-wise! It would also easily slide over to main course territory with some warm brown rice or other grain that you like.
The Brussels sprouts are roasted in the oven with spices until they're perfectly caramelized (I have a few key tips in the post). The soft edamame are a nice counterpart once the whole thing is drizzled with a simple, super flavourful and creamy peanut sauce. Fresh mint and green onions top it all off!
