Okay fine, some orchards have been visited, some pumpkin-flavored things have been ordered, and we're staring at those light jackets with heart eyes. This week we're feeling the season in all the food ways, too.
New this week on your SOS crush list is this Instant Pot Pasta with Meatballs and Lemon Herbed Ricotta. Using some pre-made meatballs and your favorite pasta sauce to keep it simple, everything goes in the Instant Pot to get taken care of while you mix together your creamy ricotta, lemon zest, fresh garlic, and herbs into the ultimate pasta dollop. YUM.
Also a really, really (like, we promise you) really easy no-knead bread situation. Because even fresh bread can be SOS-y in all the best ways. And then we carry on the Instant Pot love (because it is the very best SOS tool there ever was) with some incredibly cozy, warm, vegetarian curry, and some savory, rich wild rice soup if you are ready for soup season (truly, who isn't?).

Instant Pot Pasta with Meatballs
The most SOS recipe there ever was! Delicious little bites of pasta, tender meatballs, caramelizey tomato sauce, and some herbed lemon ricotta on top.

No Knead Bread
It's about time to fill our houses with warm bread smells, yes? This one is truly the easiest of easy with none of the kneads and all of the warm, crusty, carby, rip-apart beauty. Thank you, bread. For everything.
It's not that we CAN'T eat soup all summer, it's just that the midwest humidity makes the air itself feel like soup, so...it just doesn't seem right? But we are ready to get this champ back on the roster. Vegetarian with savory delicious mushrooms instead of chicken, and made in the Instant Pot just to make life even better. (But if you want a more traditional Chicken Wild Rice Soup, we've got that too!).
The Instant Pot is our favorite little (big) tool to get the dinner job done on those weeknights where you have very few hands and very little time. Here's another one of our favorite recipes that feels like magic!
Instant Pot Cauliflower Curry
A super delicious heap of butternut squash, tender cauliflower, and red lentils swimming in a rich vegan coconut-creamy red curry sauce. Serve it over some steamed rice, scoop it up with some naan, or just stand over the Instant Pot and eat it right there.
Because we all need an extra little pick-me-up to make it to Friday!
Biscuits and Gravy Egg Bake
This has all our favorite things happening, MAINLY GREEN CHILE GRAVY, but also fluffy eggs, buttery biscuits, and cheddar cheese all baked up with casserole-style ease. Also, green chile gravy. (This recipe was originally sponsored by ALDI)
