Hello reader I hope you're having a lovely Sunday. It looks like rain here, so we're crossing fingers. When pretty much everyone else in the area has caught the odd rain shower, we haven't and our garden has never been so dry. It's looking very sad and sorry for itself. Having said that, we have done well with our tomatoes. We only started harvesting them a couple of weeks ago, but oh my, they taste wonderful. Do you grow your own fruit, veg or herbs? Now we have a greenhouse I'm thinking it would be fun to try aubergines. Principally because baba ganoush is such a splendid summer dip. I have to confess when I was in Egypt and baba ganoush was plentiful, I wasn't a fan, though everyone else I knew loved it. I was put off aubergines at a young age and it's only in the last decade that I've come to appreciate them. Now I want to grow them. If you haven't tried baba ganoush, it's a lovely smoky aubergine and tahini dip. It's made with only four ingredients, though you can add extras. You've probably guessed by now that it's the recipe in this week's post. I've given three ways to cook the aubergine: in an oven, air-fryer or grill. I roast ours in the air-fryer as it's convenient and cheaper than the other methods. You'll find a top tip for making baba ganoush that I haven't seen anywhere else. Spoiler, it involves garlic. In other news, I'm back to work at the college next week. It will be a shock to the system after a few weeks away. I've managed to update quite a few old posts recently. It's an ongoing process.
