ZESTY Passion Fruit Coconut Cake
Passion fruit is one of my favourite cake flavours and I can't get enough of passion fruit and coconut cake. While I've already shared plenty of passion fruit cake recipes this is perhaps the simplest but doesn't lack in flavour or texture. We use two types of coconut (desiccated and shredded) and it's incredibly soft in texture and has a zingy passion fruit buttercream frosting, fresh passion fruit and toasted coconut on top!
