Hello reader For those that are celebrating over the next few days, Happy Platinum Jubilee. Seventy years in office is some going for anyone. For those not celebrating this event, I hope you have a fabulous weekend and enjoy some good alfresco dining. We're going on a picnic later today, just the two of us. It's all a bit last minute, but the weather is fair and it seems like a good idea to make the most of the bank holiday. Instead of a new recipe this week, I have a round up of some summer party recipes, both from Tin and Thyme and other food bloggers. You can't have too many of those at this time of year. AFTERNOON TEA With early summer picnics and garden parties in mind, I also have my top picks for a fabulous homemade afternoon tea. Savoury A traditional high tea always starts with something savoury, usually, but not always sandwiches. Scones
Cake - Victoria sponge is a classic cake and almost de rigeur for an afternoon tea party. Again I have several versions, including some chocolate ones. However, here's my no frills traditional Victoria sandwich cake. I say traditional, but it's made with wholemeal flour.
- A few individual cakes are always a good idea. At this time of year rose cupcakes seem like a good bet.
- Or how about a few mini strawberry cream cakes?
- And for a vegan option, a layered chocolate sponge never goes amiss.
Drinks Cups of tea are, of course, essential at any afternoon tea event. But it's nice to have a few other options too. - Elderflower champagne is spot on at this time of year, though it does take a couple of weeks to brew. Although there is alcohol present in the drink, it's only a tiny amount and is generally considered fine for kids to drink as well as adults.
- Strawberry rose mint fizz is another one for young and old alike.
- Or there is of course a classic Pimms, though that is for adult consumption only.
