Summer perfection from a new favourite cookbook
I've been a bit stumped creatively these days, so I'm extra grateful for the arrival of my friend Desiree Nielsen's new cookbook and guide titled Good for Your Gut. Desiree is a registered dietician, popular podcast host, and just all around very cool person! The recipes in this book are super creative, all vegan, and there's a wealth of information around gut health in the front section of the book. This week I'm sharing her chickpea umami burgers recipe. They are super delicious, naturally gluten-free (I did serve mine on gluten-containing buns because we don't have gluten sensitivities in our house), pantry-friendly, and mine came together in about 30 minutes. That's a 100% win to me! Hope you enjoy checking out this recipe as summer begins to creep in :) Laura | More plant-based goodness: | | | | | | Silky & Spicy Red Pepper Dip. This dip is so creamy, easy to make, and delicious. It's completely dairy-free and bean-free, and can easily be made nut-free too. It gets a flavour boost from fresh chili, garlic, shallots, and paprika. | | | | | Minty Cucumber Limeade. This cool refresher is super delicious, lightly sweet, simple to make (just blend and strain over ice), and mixes nicely with a variety of spirits (alcoholic or non). It's also nice with a little splash of sparkling water. | | | | | Grilled Pizza Portobellos. These portobellos with lemony cashew "ricotta" are an easy vegan summer main that's super flavourful and fun to make.
